Doesn't it look good? Unfortunately, I had read the recipe wrong and bought tortilla chips instead of tortillas. Oopsie!
I had to go to plan B and since I had the chicken and tortilla chips I thought I could make nachos. What really made these nachos even better was I had some Goya products that I could add to the mix. Bzzagent had sent me three Goya products to test.
The adobo all purpose seasoning is what I added to my leftover rotissere chicken before topping the nachos. I really enjoyed the extra kick the adobo seasoning gave the chicken.
I simply put down a layer of tortilla chips and covered with adobo chicken, diced tomato, salsa and cheese. Baked in the oven for about 15-20 minutes until the cheese was bubbly.
Half the family likes beans and half doesn't so we added the beans on at the end for those who wanted it. I don't think there was a noticeable difference in them being low sodium.
The star of the show for me was the yellow rice. It was easy to prepare and was a tasty side dish. I usually mess up rice by not cooking it enough. Tommy complains my rice can be crunchy, but this was just perfect. I would totally buy this again.

Oh yes, I have had a Pinterest fail! It was a Thai Peanut Chicken Stir-Fry dish... I shared the complete flop and mishap a few weeks back on the blog, haha. So no worries! You aren't alone! ;)
